Healthy Citrus & Cucumber Summer Quencher

SERVES 6-8 | 5 minutes


  • 1 lemon
  • 1 lime
  • 1 cucumber
  • fresh mint
  • ice cubes
  • chilled water

Add a handful of ice cubes to a serving jug. Slice the lemon and lime in half. Squeeze one half of each over the ice. Slice the remaining halves into thin slices and add to the jug, reserving a slice of each for garnishing. Using a vegetable peeler, create cucumber ribbons. Add the desired amount of cucumber and mint leaves to the jug and top with chilled water.

To serve, pour the drink into serving glasses, garnish with a lemon and lime slice and add a ribbon of cucumber. The perfect refreshment for a hot summer’s day!
